Potatoes bombolotti

INGREDIENTS

  • 500g potatoes
  • 2 eggs
  • 2 tbsp grated parmesan
  • 00g beets
  • 1 sprinkle of nutmeg
  • Bread crumbs
  • Corn oil
  • Salt

PREPARATION

Accurately wash the potatoes and boil them in salt water.
Cleanse, wash and boil the beets in boiling salt water.
When boiled enough, peel the potatoes and chop the beets.
Dry the potatoes for some minute by putting them in hot oven. Smash the hot potatoes on a pastry with sprinkled bread crumbs.
Put the egg, salt and some nutmeg at the middle of the smashed potatoes and mix properly; add the parmesan and bread crumbs to the dough, so that is becomes soft and at the end add the chopped beets.
Mix again and when all ingredients will be properly mixed, shape small round balls; dip them inside the whipped egg, then in the bread crumbs. After that let them rest in the fridge for 30 mins.
Heat up the oven, cook for 40 mins and serve them hot.
